Red spiny lobster

This pretty red spiny lobster shows you more than any other lobster! This color is indeed that of the animal even when it is not cooked. This lobster -Palinurus elephas- is displayed here in Eclaté de Beauchene: each joint is separated and then reassembled on a copper wire. She thus reveals each part of her carapace and her articulated legs, up to her 5-part tail with which she jumps back in case of danger.
