This pretty red spiny lobster shows you more than any other lobster! This color is indeed that of the animal even when it is not cooked. This spiny lobster -Palinurus elephas- is displayed here in a "Beauchêne exploded": a scientific display intended to understand how the spiny lobster is articulated. Each joint is separated and then reassembled on a brass wire. It reveals each part of its shell and articulated legs, up to its tail in 5 parts with which it jumps back, in case of danger.
