Polished Haliotis iris on brass easel
AN247
The Abalone, or "Paua" as Maori called it, is a marine mollusc that spends its life hang on a rock, eating seeweed, protected by its unique shell, but what a shell! The interior of these large shells has an extraordinary pearly iridescence. Iris Haliotis from New Zeland is one of the two most beautiful abalone species thanks to its mother-of-pearl. Here, we polished the shell in order to underline its crazy natural color.
The abalone is also a refined dish much sought after by gourmets, so many qualities!
